1 no (2kg- 2.5kg)  Whole duck (inners and head removed)

Marination

1 tbsp Dark soy sauce

1 ½ tsp  5 spice powder

1 tsp Salt

½ tbsp Sesame Oil

Stuffing

1 tsp Oil

10g Garlic (fine chopped)

10g Shallot (fine chopped)

100g Glutinous rice (soaked overnight)

30g Fresh lotus seed

50g  Water chestnut (chopped)

10g Dried scallop (soaked)

50g Frozen sea cucumber (thawed and diced)

1 tbsp  Soy sauce

50ml Water

Sauce

1 tbsp  Oil

30g Ginger (sliced)

10g Dried scallop (soaked)

40g Spring Oyster sauce

30g Soy sauce

20g Dark soy sauce

30g Sugar

1L Water

20g Cornstarch

10g CARNATION® Evaporated Creamer

Methods

  1. Mix the marination ingredients together, brush the mixture evenly on the duck. Marinate for at least 2 hours.
  2. To make stuffing, heat oil in a pan, sauté shallot and garlic to fragrant.
  3. Add in the remaining ingredients, cook until liquid absorbed. Set aside.
  4. Fill the filling into the duck, seal the duck with satay stick.
  5. Wipe the surface of the duck to remove excess liquid. Deep fry the duck until golden brown.
  6. In a pot, heat up the oil for cooking, fry ginger sliced until fragrant. Add in the remaining ingredients and the duck, except for cornstarch and CARNATION® Evaporated Creamer.
  7. Bring to boil, simmer for 50 minutes with the breast side down. Turn the duck over, continue to cook for another 40 minutes.
  8. Mix cornstarch with water. Transfer the duck into a plate. Thicken the sauce with cornstarch mixture. Stir in CARNATION® Evaporated Creamer.
  9. Drizzle the sauce on the duck. Serve.

40克 蚝油

30克 酱油

20克 黑酱油

30克 糖

1公升 水

20克 玉米淀粉

10克 CARNATION® 淡奶

烹饪步骤

  1. 拌匀腌料食材,均匀刷于鸭子表皮。腌制至少2个小时。
  2. 热锅放入油炒香葱头仔碎与蒜碎,用于制作釀料。
  3. 加入其余内馅食材,煮至收汁。盛起一旁备用。
  4. 将内馅填入鸭子腹腔内,用竹签封了开口。
  5. 擦拭鸭子表面多余水分。将鸭子炸至金黄。
  6. 准备另外一个锅子,热油爆香姜片。加入除了CARNATION® 淡奶以及玉米淀粉以外的材料后,放入鸭子。
  7. 鸭胸面朝下,煮至沸腾,然后转小火烹煮50分钟。再将鸭子反面,小火烹煮40分钟。
  8. 鸭子起锅摆盘。 将玉米淀粉和适量的水混合拌匀,勾芡锅中酱料。倒入适量CARNATION® 淡奶 搅拌均匀。
  9. 在鸭子上淋上酱料,即可享用。
